Overview
Grouper (known locally as Mero) are the heavyweights of Los Cabos reef systems. Several species are found in Baja waters, including the Gulf Grouper (Epinephelus acanthistius), Leopard Grouper (Mycteroperca rosacea), and the massive Giant Sea Bass (Stereolepis gigas). These ambush predators use structure, caves, and ledges to launch surprise attacks on prey.
In Los Cabos, Grouper are present year-round and are a prized target for both sport fishermen and local markets. They're caught using stout bottom-fishing gear near rocky reefs and underwater pinnacles. Their fight is distinctive: a powerful, head-shaking surge straight for the bottom, testing both your drag and your patience.
Physical Characteristics
Grouper have a robust, elongated body with a large mouth and a rounded tail. They vary in color from brownish-gray to reddish with spots, bars, or leopard-like patterns depending on species.
They're protogynous hermaphrodites: all are born female and some transition to male as they grow. This makes large breeding males particularly important for population health.
Best Seasons
Grouper are available year-round in Los Cabos. Peak season is April through November when water temperatures are warmer and the fish are actively feeding. They hold in deep structure (80-300 ft) and are most active during periods of current. The best fishing often occurs during the transition between incoming and outgoing tides when baitfish are moving.

Table Fare
Grouper is among the finest eating fish in the ocean. The meat is pure white, firm, and mild with large flakes: perfect for grilling, baking, frying, or ceviche. In Cabo, Grouper is a staple on local menus, often served grilled with garlic butter or as the star ingredient in fish tacos. The cheeks and collars are considered delicacies.
