Known as Mahi-Mahi in Hawaii and Dorado in Mexico; these neon-green and gold speedsters are among the most beautiful and hardest-fighting fish in Cabo.
Overview
Dorado, also called Mahi-Mahi or Dolphinfish, is one of the most vibrant and exciting game fish you'll encounter. With their iridescent gold, blue, and green coloration, explosive surface strikes, and acrobatic leaps, they're a favorite among anglers of all skill levels.
In Los Cabos, Dorado are a seasonal species that arrive when water temperatures climb above 74°F, typically from June through November. They're often caught while trolling for tuna or marlin, adding variety to any fishing day.
Physical Characteristics
Adult males (bulls) develop a prominent forehead that becomes more pronounced with age. Their bodies shimmer with metallic gold, electric blue, and emerald green. When hooked, their colors flash and shift through the spectrum in a breathtaking display. Females (cows) are typically smaller with a more rounded forehead.

Dorado is among the best-eating fish caught in Cabo. The meat is firm, white to pinkish, with a mild sweet flavor. Popular preparations include:
